Oh wow! This looks so incredibly good!!! I want that pie! And I think you’ve inspired me to try making gumbo. Can I use chicken or turkey sausage? I will forgive you the tablecloth because the food makes my mouth water.
I think gumbo is one of those like chili or goulash, people do what they want, everyone’s is different. I think you can do whatcha want. There are purists, but I’m not one of them. To me, the roux, the trinity, and the okra are what it’s all about. Meat and fat make the flavor, so use what you like. 🙂 And do let me know if you enjoyed it!

Kangaroo leg steaks are also excellent.
Audrey and I are working our way through all the “unusual animals”, as she calls them, we’ve had ostrich, kangaroo, wild boar and bison so far. Next on the list is alligator steaks.

Went pretty simple here tonight. Burgers and potatoes chips. Oh, yeah, ice cream. Gumbo looks delicious. I love the okra best 🙂

My brother cooked dry ass hamburgers and burnt hot dogs, no dessert. But I didn’t have to cook, so I can’t complain too much 😉

Ostrich is rare here. I can only recall seeing it on a menu a few times. Were they delicious?
