Biscuits n’ Brine Gravy

I don’t always make biscuits n’ gravy — Let’s face it, this is bad for you food — but when I do make biscuits n’ gravy, it’s a labor of love.

 

I make excellent biscuits and gravy. Gravy may be my milieu. Not that you can see that in photos. Y’ever notice some of the best tasting stuff looks like a pile of sick in photos?

Anyway —
This is an iconic Mottern Marriage Story, one which has been told, I think, to all we know. Shortly after we were married, I decided to make biscuits and gravy for The Mister. With the first bite, he made an awful face. Just awful.
“It’s really salty,” eked out of his dry mouth before he coughed and chugged down half his tea.
Shocked, I took a bite.
(I didn’t eat meat then.)
OH MY WORD, the salt! Oh the salt!
My whole mouth wrinkled.

Unfortunately, this is when I realized I used flour from the wrong container. I used the salted flour I keep for batter.
Mmhm. Salted flour in my biscuits, salted flour on my sausage, salted flour in my milk. And then, of course, all seasoned with salt.

Yeah, even if I’m not gonna eat it, I gotta taste it.
I don’t keep seasoned flour in the house anymore.
Not since that day have I served biscuits n’ brine gravy.

    A popular Local oldies R&R and root beer place has sign on door: “Nothing served here is good for you.” I never have biscuits and gravy at home, but if it’s on the menu, it’s mine.

    Oh man, biscuits. I’m on Day 18 of a Whole 30. I’ve had no carbs/grains/dairy of any kind (I won’t even discuss the lack of wine). I could eat a mess of biscuits right now.

    I once put three tablespoons of salt into a recipe instead of three tablespoons of baking powder. Whoops. There went the waffles…

    Mmmmm, that looks gooood! Brine gravy, not so much, but OH SO FUNNY!! Not at the time, of course. At the time, it was the ever-so-sad! Did I know you don’t eat meat? Do you eat eggs/dairy/fish? Charlie and I eat eggs/dairy/fish/porkproducts and I eat any damn thing I please when I’m out sommers. Brine gravy. ~snicker~

      I do eat meat now, I just don’t love it. I don’t eat much of it. Rather have it in things, ya know?
      I didn’t eat meat from like 94-2002. Sassy apparently needed me to eat meat, cause I craved it. :/ She’s a serious carnivore.
      Have always eaten eggs/dairy/fish.
      That’s part of the reason I enjoy your recipes, generally light on meat or meat optional.

    I am honestly trying to cut down on my carb consumption. That includes beer as well as bread and biscuits. That being said I still love B&G and yours look delicious. I think it is the gravy that drives me wild.

    That’s pretty funny. My daughter is a good cook, although not an experienced one. However, her first baking experience was banana nut bread, and she used the Tablespoon instead of the teaspoon for salt. Hahaha. I am saving that story for her future husband, if she ever finds that person.

    I don’t do gravy, but those biscuits peeking out underneath sure look good. I wish I could make biscuits. Mine always turn out like hockey pucks.

  15. Your mister’s reaction would have been startling and unsettling since you were expecting raptures. But, it makes for a great family story. Yes it does.
    I miss gravy. Since we’ve gone meatless, we don’t do gravy. But you need gravy on your poutine. But it’s just as well. Too much salt in gravy for my mister – he has high blood pressure.

      At no point did I ever give up gravy, or stock, so I can see how this would be dramatic. Vegetarians live longer, so I figure I won’t live as long as long as vegetarians, but a bit longer than the big carnivores 😉

  16. My grandmother used to make awesome apple pies. As her sight failed, she substituted salt for sugar on accident. It wasn’t her best effort.

  17. Can you give us your recipe? I’ve been trying to find a good sausage and gravy recipe with biscuits forever now. Though the kids don’t like my biscuits. I get lazy and don’t want to roll them out, lol.

      Aw, I wish, but I rarely use recipes. I usta make biscuits as a kid, without the pastry cutter and all that… when we had LARD. Remember lard? Magical.
      I do pretty much follow the directions for biscuits on the back of the White Lily package. Unlike their directions, though, I do roll them out, folded at least four times, to get some height and a good break in the middle.
      They rise up better on a shiny cookie sheet, but they taste better in the iron skillet, so I use the skillet.

  18. Early in my marriage, TWICE, I messed up reversing baking soda and baking powder ratios in a cornbread recipe. It was so awful that it was inedible. To this day, I slow down when I get to that part of the recipe and am VERY deliberate about which ingredient I’m adding!

  19. Got one of those ‘first married’ stories, too. My wife was making enchiladas (because I love me some Mexican food) and mistook the cinnamon for chili powder. Those were some interesting enchiladas…

  20. I’ve done something like that when I emptied an entire jar of coffee in to my coffee cake mix after misreading the recipe. I can still remember the very strong and bitter taste and the powerful caffeine high that followed. Never again !
