In case you do not know, my MIL makes the best corned beef in the entire world. It is so tender that tender doesn’t even seem like the right word. Cliched phrases like ‘melt in your mouth’ don’t do it justice. It’s seriously one of my favorite things to eat, and it’s meat, which is kind of a big deal, so I need you to understand the dramatic emphasis here.

Whenever MIL asks me what I want to eat I tell her, “Corn beef and sweet gravy!” and she always laughs and says, “Oh Joey!”
I haven’t figured out why it’s funny, but at least she doesn’t cry.

I hope you aren’t hungry.
It’s important to use the spoon to make a hole in your mashed potatoes so that you get a substantial pond of gravy. I swoop the meat through the mash and gravy. The word gluttony comes to mind here, folks.

No, that’s not the same food at all. That’s firsts and seconds.
Doesn’t it photograph beautifully?
I could eat another round of that right now. I will probably fantasize about it off and on all day.
I really should make it, but then I don’t know that I could stop myself, and in the comfort of my own home, where I tend to be rude af not as well-mannered, I imagine jabbing people with my fork, screaming, “Mine! Mine!”

    No corned beef here, because Charlie can’t eat beef for health reasons. Any corned beef I ever made was tough. 😦 ~MA weeps~ What’s sweet gravy? And, yes, you NEED to make a crater in your taters for a pool of gravy. It’s like a volcano of deliciousness. The first time I made taters and gravy (instant taters, ’cause I was just 13 and didn’t know any better), The taters were soupy and the gravy was solid. NATURALLY I had a friend over for that meal. She put a glop of gravy on her plate, made a crater in it, and filled it with the soupy taters. Beth. I love that girl! Any wonder we’re still friends?

    Oh, my gluttony food just might be succotash, of all things.

    That’s definitely what Sundays are for. My gluttony food is warm bread pudding with vanilla ice cream. But you already knew that. 😊

    It does look delicious. I don’t make it very often but maybe I should try it again since it will be around a while until St. Patrick’s Day. I like the mashed potatoes factor instead of cabbage!

    My gluttony food? Gosh there are so many foods I like. I think I would have to say dressing. Or stuffing. That wondrous mess of old bread, mixed with sweet onion and celery, drown with a good chicken stock then mixed with egg and oven baked until it has set up like a proper pudding with crunchy edges. I like it with or without corn bread. Mixed with sausage or not, with or without gravy I absolutely crave it at times. Of course gravy would be appreciated. Enjoy your corned beef and sweet gravy.

    haha –
    if you did make it and needed to hoard it for self – you could always stash it away in a very ugly tupperware container and label the leftovers as kale and sprouts – and then no one would touch it (unless your family loves kale and sprouts – and unless they know awesome food is found in ugly containers)

    anyhow, good news is that I just had some chili (not great chili – but did the job) and so I was able to indulge in the words and enjoyment for this corned beed dish without drooling – whew –
    and this was beautifully written – sometimes a favorite meal is a pure gift and your MIL should smile to read this

      My family has leftover aversion. The Mister will eat it if I replate it or pack it pretty in his lunch, but the kids? “EWWW!” lol

      I’m glad you liked the post, I know MIL knows how much I love her corned beef ❤ AND she sent me home with dressing and she made lime jello.

        well I read about the dressing in the comment section – ha
        and regarding leftovers – o my goodness – we have that here too.
        and last year I had to smarten up because my youngest has it with his take out leftovers too – and so that is okay if you don;t want it – but I hate throwing it away days later – so just admit that you will not eat it so dad or I can chomp it down – or even the dog – but not the trash.
        must be some gen Z or Millennial thing.
        I dig leftovers. ha

    I love corned beef, too, and haven’t had it home made in decades. Can I visit? I did find a recipe recently that looks good and keep meaning to give it a try. Your post is saying “Do it!” As for gluttony foods: Homemade peach pie, blackberry pie, rhubarb pie, lemon cheesecake, homemade fries, bacon, bacon, bacon, maple syrup on ice cream. I’m a regular Caligula.

  9. Home made toffee with dark chocolate on top. I could make a whole batch and dare I admit I could probably eat the entire thing over a couple of days. But, I share if I have to. 🙂

    You’re very lucky. Neither of my MIL could cook at all…. And if they did, they used a lot of canned soups. One towards the end, subsided entirely on cookies and Arby’s roast beef sandwiches!

      I don’t know why it’s sweet, it just is, kinda like ham gravy. It’s divine.

      • Did your MIL give you the recipe? Mine gave me her recipe for Hulimpkies (sp?) but it’s not the same as hers at all. I found a different one I use when I make them which is seldom. Maybe I’ll make that for his birthday this year. It’s been a long time since he had them, and my MIL took the good recipe to Heaven with her a couple of years ago. 😦

          There’s not a recipe, but yes, I know how she cooks it.
          What’s a hulimpki? Definitely misspelled, the internet can’t define it for me! lol
          I do fear the day she can no longer make it… lots of things, actually, and my own mother, too…

          • Cabbage Rolls with the Polish name. My He-Man has Polish/Croatian origins. Get the recipe while you can! Which reminds me I need to get the cranberry squares recipe from my mom again. I can’t find it, and I love it. I asked for that for my Birthday if I didn’t ask for Chocolate Cake with Chocolate Frosting. Of course when I did make it wasn’t the same. I think she threw in a whole bunch of Love that I didn’t and that made it soooo good! 🙂

    I’ve never had corned beef. Is it a bit like pastrami? I do like a good pastrami sandwich. Yes, it’s a must to make a place in the middle of the mashed potatoes to put the gravy in. 🙂 Well, any kind of sweets are my downfall, especially dough nuts!

  14. We’re corned beef fans here too. Love it as the evening meal, as Rueben sandwiches the next day, and that last little bit chopped up into hash for breakfast.

    I don’t know that I’ve ever made corned beef. Mashed potato volcanos full of gravy. I could probably eat that all day. I also love a good mac and cheese. And sourdough bread. I’m pretty sure I could eat an entire loaf of sourdough by myself. 🙂

    Oh my god, that meat looks good. I always thought corned beef was beef infused with corn kernels (my grandmother never made it growing up), but now I see that it’s not. I must try this.
