This evening finds me with zero emails and this jambalaya.

The Mister proclaimed, “Baby, this is fucking delicious!” so I reckon he likes it fine. He ought to. Three meats and heat. If I feed him a chocolate dessert, I’ll hit the trifecta.

Jambalaya’s not a complicated dish but I rarely make it. I kinda hate chopping. Can I confess that?
Yes, I have a food processor, a fancy one even, but honestly, I used it most when I made baby food, because when you make baby food, you want everything to be all obliterated to mush. I seldom use it now, because it is made of disappointment and you gotta wash the damn thing. Pulse, pulse, stir, pulse, stir, pulse, disassemble, scrape, reassemble, pulse, pulse, pulse, stir, pulse —

There are some kinds of chopping one needs to do the old-fashioned way.
For instance, well, pretty much everything that relies heavily on texture.
Food processors probably have good intentions.
Food Processor be like, “Oh you like I help you with bruschetta? You put olives in me. I chop for you.”
In reality, Food Processor be all, “Oops! Olive tapenade better.”

If you don’t cook that wasn’t funny. You should cook so we can laugh together more often.
I’m just sayin.

    I have all sorts of food choppers and cutters, and yet I always end up returning to a knife and cutting board, basically for the reason you mentioned: less clean-up!

    I don’t cook. I mean, I can, but the Mrs does much better. But, I can relate to chopping by hand for texture and for not cleaning. Plus, these things take up space. The Jambalaya looks very good.

      The gadgets eat space. *nods* My food processor lives behind the bread basket, deep in the bowels of the lower cabinets. It only sees the light of day 3-4 times a year, usually over the holidays.

    Basically, I have a processor. My daughter gave it to me. I only use it when I wish to pulverise stuff to a puree’. If you want food to taste good, that is not pureed, you chop it, by hand. I don’t why this is so. But it is.

  7. I support your trifecta. And you don’t lie about the food mashers: help from hell. I have several different ones, so I never really know which one to use for what and then it’s hilarious when I expect from a dear old one to make me dough.

    Oh the choppers and gadgets I have in my cupboards… languishing, waiting to be used… as I wield my trusty knife, and it has to be that one particular one, so the rest of my knives are also wallowing, feeling ignored!

    That got me laughing. In the restaurant biz all processors are called Robo Coupes; whether they are or not. I only used them when I was in a hotel and they were mandatory. I default to a knife and stone. As a matter of fact that was a test I gave new chefs before I hired them. Chopping 101. Jam. That is what I need. Fat Tuesday is coming soon. Gumbo, Crawfish yea. Let the good times roll. Back when the Jazz Cooker was open they had a big Crawfish Boil. They didn’t always do it on Tuesday but no matter when they did it always rained. See all you gotta do is mention food and I start to ramble. HAVE A GOOD WEEK. (all caps so it must be important).

      I’m a good chopper, I just don’t LIKE it. I’m not so great with the pestle. It’s like kneadin dough, kills my hands, man.
      I reckon we’ll have tacos on Fat Tuesday…. Maybe even take-out tacos, lol! I work late most Tuesdays.
      Anyway, I’m glad you laughed.

    ROTFLOL!!! That WAS funny!!! My processor doesn’t always mush everything. Sometimes it does texture. I use mine a lot. Charlie cusses because it’s “so hard to clean”, so I wash it myself after I use it. WELL WORTH THE TROUBLE if you make, like, hummus or baba ganoosh (which is just fun to say, amIright?).

      I always have to strain that crap, so YES, food processor on that stuff, yes ma’am. I’m picky about creamy and now I know your place is suitable for baba ganoush and hummus đŸ™‚

    You know, I have a little food processor, used to have a big fancy one. I also have a juicer, and a blender. Do I ever use them? No, I chop with a knife. Much easier than to get on a step ladder to get the others out of the high cabinet.

  16. Husband made something Thai – I think just freezer thingy – for his dinner last night – and just from him heating it, I couldn’t breathe!

    Everyone used to make fun of me. I grew up in Mexico, and Mexicans eat a lot of very hot things, and they’d tell me ‘no pica’ (it’s not hot), and the smallest taste would blow my mouth for hours.

    Enjoy – just don’t heat it where I have to breathe it. I know, I know – I’m a wimp.

    My food processor rarely gets used and it’s almost only if I’m trying to make a puree. Jambalaya sounds good. The hubby is counting down the days until the end of the 30 days of vegetarianism (tomorrow is the last day). I’m sure he’ll want something meat-filled and tasty.

    I never could figure out what the difference was between a blender and a food processor except size. I like chopping except those times when I’ve sliced a piece of me into dinner by accident. But usually I don’t and I still have all my fingers. Did you make a chocolate dessert?

      I really only use my blender for margaritas and milkshakes… And I might could make them in the food processor, but it’s more a bitch to clean.
      I did not make a dessert. He found some unfinished chocolate almond ice cream in the freezer.

    I have a mini food processor which has kept me from purchasing a big one. I don’t mind chopping. It’s sort of zen like when you get in the groove.
