Last month I wrote a post that included the menu for when we had some friends to dinner, and Prajakta said she wanted to see a photo of the cheesy quinoa. I didn’t have one. She said, “Next time or else!” I don’t wanna know what else is!
For cheesy quinoa, I cook the quinoa and then when it’s done, I stir in someΒ soft cheese. Just whatever I have: goat cheese, swiss, gruyere, cream cheese, even Laughing Cow.
For Prajakta — don’t else me!
Goat cheese and quinoa sound delicious, I’ll have to try that!

You certainly made a delicious meal which could rival any professional chef, Joey. I like the improvement of using quinoa instead of noodles or white potatoes. Outstanding!
In the summer I make quinoa cold salads, Joey.
I boil the little buds until they burst and then put into a sieve with cold, flowing water. Once it is cool, I add a homemade balsamic dressing, shaved carrots, red and yellow peppers, purple onions (or vidalia) thinly sliced, and mushrooms. Some people might try this with a small amount of maple syrup, too. I like to marinade it overnight but my youngest daughter likes to serve it lightly coated. The grandkids like this better than cole slaw. There are so many different ways to incorporate this unique, nutritious grain.
I like the red or purple quinoa for the presentation and lovely, colorful appearance.
